About the Farm
Background
The Bellevue Valley, first settled in 1798, is Missouri’s oldest interior farmer settlement. The valley's economy has long been agricultural, focusing on livestock, hay, and small grains. The 7_Cross Ranch, now known for its high-quality marbled beef, has been a significant part of this landscape for 25 years. Rodney and Tina Roundcount purchased the ranch, continuing the tradition of cattle farming in the valley.
Practices
The ranch operates as a cow-calf operation, ensuring all beef sold is born and raised on the ranch. This allows for strict quality control over the beef. The cattle are grass-fed and grain-finished, with registered Angus sires selected for their marbling traits. The addition of Midwestern corn enhances flavor, and the cattle are raised in a stress-free environment. Older, retired members of the herd are allowed to live out their days on the ranch, grazing on grass and drinking spring water.
The Rest
Beef orders are taken by reservation for quarters, sides, or whole beef, and are filled based on availability. All beef is vacuum packed, labeled, and frozen. Customers can save significantly by purchasing larger packages compared to store-bought Certified Angus beef. The ranch is located in the picturesque Bellevue Valley, surrounded by the Saint Francois Mountains, which provide a unique microclimate and pure spring water for the cattle.
