About the Farm
Background
Situated in the rolling hills of central Missouri, just north of the Missouri River, Goatsbeard Farm has been dedicated to creating a sustainable livelihood from the land. Known for their delicious artisanal cheeses, the farm has been hard at work for 21 years, providing high-quality products to farmers' markets, stores, and restaurants in Columbia, St. Louis, and Kansas City.
Practices
The farm's goat herd, consisting of about 45 milking does, is a mix of Nubian, Saanen, and Alpine breeds. Each morning after milking, the goats are taken out to pasture to graze on diverse grasses and legumes, receiving vital exercise and sunlight. The farm adheres to a seasonal dairy cycle, respecting the natural breeding, gestational, and birthing cycles of the goats. Milking occurs twice daily during the lactation period from March through December, with each goat producing an average of one gallon of milk per day. This milk is immediately turned into cheese using hand-ladling techniques to preserve the delicate curd structure, ensuring the cheese's texture and flavor.
