For over 20 years, Eric, Diane, and Tom Thompson have been cultivating heirloom varieties of garlic on their farm located on Heritage Trail north of Farley, IA. Known for their dedication to garlic, they have become a staple at the Dubuque Farmers Market, offering a range of garlic flavors from soft and delicate to robust and spicy.
Practices
The farm employs organic farming methods, planting over 8000 cloves of garlic each fall in beds to make mulching more efficient. Harvesting begins in July, followed by a three-week curing process before the garlic is ready for market. The Thompsons' commitment to organic practices ensures that their garlic is grown without synthetic pesticides or fertilizers, maintaining the health of the soil and the surrounding ecosystem.
