About the Farm
Background
Located in southwest Missouri, this family-owned and operated ranch has dedicated itself to raising black angus beef the old-fashioned way. Known for its gourmet quality, the ranch has built a reputation for producing flavorful and tender cuts of beef.
Practices
The ranch raises its black angus cattle on grass, both fed and finished, ensuring a natural diet. The beef is dry aged for 21 days to enhance flavor and tenderness. Processing occurs in a small local USDA plant, where each animal is handled individually. Only knives are used during the cutting process to maintain clean cuts free of bone fragments.
The Rest
The ranch offers a variety of beef cuts, including Rib Eye, Filet Mignon, NY Strip, and Top Sirloin, with the remainder ground into Gourmet Steak Burger. Additionally, they sell Hill Billy Bacon, a product from one of their processors. Beef is shipped nationwide from the ranch on Mondays and Tuesdays, packed in coolers with dry ice and shipped via FedEx.
