About the Farm
Background
Founded in 2008 by Josh Dolan, Sapsquatch has its roots in the traditions of sugarmaking learned in Pulteney, NY. Josh honed his skills under the guidance of Bill Garrison in 2002 and has since been dedicated to the craft. With a background in organic agriculture and experience as a local foods specialist at the ABC Cafe in Ithaca, Josh brings a wealth of knowledge to the sugarbush. Currently, he also serves as the community food gardening educator at Cornell Cooperative Extension of Tompkins County.
Practices
Sapsquatch employs small-scale, community-supported methods with approximately 500 taps. The farm focuses on producing small-batch, wood-fired maple syrup, emphasizing traditional techniques and a deep respect for the land. Educational events and work trade experiences are integral to their approach, fostering a connection between the community and the farm's sustainable practices.

Located 8 miles from downtown Ithaca in Enfield, NY, Sapsquatch offers a variety of maple products and hosts educational events on the farm. The farm also engages in discussions about climate change and its impact on maple production.
