About the Farm
Background
Overlooking historic Chautauqua Lake, this third-generation family-run farm has been owned and operated by Paul and Connie Spas. The Spas family sought out and assembled a herd of Red Devon cattle from across the United States, including Nebraska, Texas, Virginia, and New York's Finger Lakes. Known for their fine-textured, well-marbled, and flavorful beef, Red Devon cattle have a storied history dating back to 1623 when they first arrived in North America on the ship Charity. The breed is one of the oldest, with origins in southwestern England, including Devon County.
Practices
Combining top-rated cattle genetics with skilled pasture management, the farm produces natural, grass-fed beef. The emphasis on pasture management ensures the cattle are raised in a way that promotes their health and well-being, resulting in high-quality, tender, and flavorful beef.
The Rest
Pre-ordered bulk freezer beef is available from June through November, and individual cuts can be purchased from the farm store daily during the same months. The farm is proud to offer their gourmet beef to valued customers.
